Michaela’s Meatballs

Serves 2-4

My daughter has loved these meatballs since she was little and it’s one of my few surefire wins for dinner. Now that she’s older, she helps measure the ingredients and roll them out. Although she hates getting her hands dirty, a funny trait she seems to have gotten via osmosis from my husband. It’s fun to see her working in the kitchen, doing real cooking tasks. Involving her in the cooking process definitely has contributed to her willingness to try new foods. She’ll always eat something she’s made herself!

Ingredients

2 tsp oregano
1 tsp granulated garlic
1 tsp granulated onion
2 tsp dijon mustard
1 clove garlic, zested
1/4 cup fresh parsley, chopped 
1 egg
2/3 cup panko
1/4 cup parmesan
2 tbsp good olive oil 
1 lb ground beef (preferably 80% lean)


Directions

  1. Whisk together oregano, granulated garlic, granulated onion, mustard, zested garlic, fresh parsley, egg, panko, parmesan, and olive oil. 

  2. Gently fold seasoning mixture into ground beef. Roll into 1 oz balls. 

  3. Sear meatballs in cast iron pan on all sides until they’re crisped and browned. Add pureed tomatoes to cover halfway and bake in a 350 degree oven until meatballs are cooked through, about 10-15 minutes. 

  4. Serve immediately with pasta or polenta and sauce.
